Instructions
In an 8 quart pot, place 6 quarts water and bring to boil on high heat. Add salt to taste and add pasta mixing it in. Let pasta cook for 9 minutes (if using fusilli).
While waiting for water to boil, heat up 1 Tbsp olive oil in a 12 inch sauce pan on medium/high heat. Take off skin from turkey sausage. Brown sausage in hot oil, breaking it up. When sausage is cooked, remove from pan and set aside. Turn heat to medium.
Add 2 Tbsp olive oil to the pan. Cook garlic in oil until fragrant (about 1 minute). Mix in tomatoes and broccoli. Add 1/2 cup of pasta water. Cover the pan. Let cook for 5 minutes, turning once until broccoli is cooked.
Reserve another 1/2 cup of pasta water. Drain pasta and add it into the pan with vegetables. Mix in pasta water, spinach and sausage. Sprinkle lightly with salt and pepper to taste. Top with cheese and chopped basil.
