Easy Apple Tart

I like to use apples from my apple tree for apple pie, muffins, tarts, spiced apple cake, crisps and smoothies.  If I don’t have a lot of time to bake I make an easy apple tart using puff pastry.  It’s great with vanilla ice cream, or drizzle it with caramel sauce or just by itself.

Easy Apple Tart

Ingredients

  • 2 apples Granny Smith or Golden Delicious
  • 1 sheet frozen puff pastry thawed
  • 2 Tbsp sugar + more for dusting
  • 1 Tbsp lemon juice
  • ½ tsp cinnamon
  • 1 egg beaten
  • 1 Tbsp honey
  • 2 Tbsp butter
  • cup apricot jam or preserve
  • 1 Tbsp water

Instructions

  • Thaw frozen puff pastry for 25 minutes. Preheat oven to 400 degrees.
  • Peel, core, and slice apples thinly. Use only the good slices (of close to uniform size) not the ends.
  • Place sliced apples in a bowl. Mix in lemon juice.
  • Add sugar and cinnamon and stir.
  • Lay parchment paper on a large cookie sheet.
  • Unroll puff pastry on the parchment paper and just flatten it by using a rolling pin a few times.
  • Lightly flour your hands and fold over the edges of puff pastry ( about 3/4 inch) and press together lightly.
  • Arrange apple slices horizontally and overlapping each slice. (you will have 2 rows)
  • Dot apples with butter and drizzle with honey.
  • Brush edges of tart with beaten egg and dust lightly with sugar.
  • Place tart in the oven and bake for 25 minutes. While tart is baking, simmer apricot jam and water in sauce pot. When it starts to get thinner, turn off heat. When tart is cooked, brush apple slices with apricot jam. Serve with vanilla ice cream or caramel sauce.
