Stir Fried Vegetables with Toasted Cashews

Ingredients
  • 1bag stir fry mixed vegetables*(broccoli, snow peas, carrots, napa cabbage, zuchini)
  • 1/2 cup diced onion
  • 2 garlic cloves, minced
  • 1Tbsp canola oil
  • 1/2cup toasted cashews
  • 2Tbsp oyster sauce
  • 1 freshly ground pepper to taste
  • 1 celery stalk chopped
Instructions
  1. Heat oil in a skillet on medium-high heat. Add onions and carrots and stir fry for 2-3 minutes.
  2. Stir in garlic and celery, let cook for 1 minute. Add broccoli, snow peas, the oyster sauce, and freshly ground black pepper to taste. Stir it together and cover the skillet. Reduce heat to medium. and let it cook for 2-3 minutes. The steam will cook the broccoli and carrots. Uncover and add the cabbage or kale. Cover again and cook for 2 minutes. Turn off heat and top vegetables with toasted cashews. Serve over steamed rice.
Recipe Notes

* Stir fry mixed vegetables in bags can vary. Some come with kale instead of cabbage. You can also chop your own mix and add mushrooms and zucchini. Use what you prefer depending on what is in season.
** Raw cashews can be toasted in the oven at 350ºF for 10-11 minutes.
