Healthy Snack

This season we have an abundance of mandarins.  This is one of my favorite snacks. They are a good source of vitamin C, folate, betacarotein, fiber, potassium, magnesium, vitamins B1, B2, B3, and the compounds lutein and zeaxanthin.  They have a very thin skin and are commonly seedless so it’s easy to eat them by hand.  The peel or zest is used for baking and making cocktails.  The skin can also be eaten coated with chocolate.  What’s not to love about mandarins?
