Ingredients
  • 2cups old fashioned rolled oats
  • 1/2tsp ground cinnamon
  • 1/2tsp vanilla
  • 1/3 cup raw pecans
  • 1/3 cup raw cashews
  • 1/3cup chopped dates or dried apricots
  • 1/4cup maple syrup
  • 1/4cup coconut oil
  • 1/3cup unsweetened flake coconut
  • 1/8tsp salt
Instructions
  1. Preheat oven to 350ºF. Line a large baking sheet with parchment paper. In a bowl combine all ingredients and mix together. Transfer mixture onto the parchment lined baking sheet. Spread it around with a spatula and level the top. Bake in preheated oven at 350ºF for 25 minutes.
  2. Take baking sheet out and let it cool completely on a rack. When cooled, transfer granola in tightly sealed containers. Perfect for snack or serve with milk and diced fruit for breakfast.
