1/4cupfreshly grated parmesan cheese+ more for topping
1/4cupfreshly grated fontina cheese
salt and freshly ground pepperto taste
Boil pasta according to package direction. Meanwhile heat oil and butter in a pan on medium heat. Once hot, stir in shallot and cook for 1 minute. Add in garlic and cook for another 30 seconds.
Stir in cream and peas. Season with salt and freshly ground pepper. Let simmer for 3-4 minutes. Add in spinach and let simmer for 1 minute.
Meanwhile, drain pasta and add it into the pan. Toss in 1/4 cup each of freshly grated fontina and parmesan cheese. Adjust seasoning if needed with salt and pepper to taste. Turn off heat. Serve immediately with more freshly grated parmesan on top.
